How I Spent MLK Day

I was home from work today so I decided to bake some gluten free goodies for Lindsay.

I've always enjoyed baking and now, the challenge is to make gluten free cookies and breads edible for both of us.

Gluten Free Chocolate Mint Cookies
Gluten Free Chocolate Chip Mint Cookies. These were very tasty. I think the trick is to add enough chocolate and sugar to hide the odd texture that most gluten free baked items have.

Gluten Free Bread
My attempt at gluten free bread. It's tougher than cookies.

I also baked something for me. This is a no kneed recipe that's super easy. Basically, you mix the ingredients before you go to bed, wake up and bake it off in a dutch oven. Easy peasy.

I have to give kudos to my hubby on this one. The cookies, three days later even, are still fantastic. And the bread...so light and airy. Perfect toasted and dipped in olive oil.

Okay, I'll take your word for it. The cookies looked good, but the bread looked nasty. What a nice hubby baking and all. Awww
